Foodie Friday: Bun Thit Nuong (Grilled Meat on Noodles)

(We all know I love to eat, so you know I am not kidding around when talking about food. On Fridays, let me torture myself and anyone who might stumble upon this travel blog with a photo of a delicious food I had in my travels. This week, Foodie Friday features one of the all-time favorite dishes: Bun Thit Nuong, or Grilled Meat on Noodles.)

Vietnam is on my mind lately. Maybe it's because Tet, or Lunar New Year, is just around the corner and I remember spending it in one of the loveliest spots in Asia—Hoi An. It's so lovely here (especially during Tet) that I fancied myself a romance poet while in Hoi An.

More than its small yellow shop houses and its slow-flowing river, however, Hoi An has delicious food. I get that that generally applies to all of Vietnam, but it was in Hoi An where I found one of my all-time favorite dishes: bun thit nuong, or grilled meat on noodles. Sure, pho is great, and bun cha, even more so. But bun thit nuong, this simple noodle bowl is both refreshing and filling at the same time. Start off with a layer of lettuce and other leafy greens, and then a layer of soft rice noodles. It is then topped with slices of sweet and peppery barbecued pork, and what distinguishes this version from other bun thit nuong found elsewhere in Vietnam, a thick peanut-based gravy as dressing. Some cucumber slices for garnish (or for eating, whatever) and your bun thit nuong is perfect.
